Empanada Recipe
Filling: Soak ¾ cup achote seeds in 3 cups warm water to make achote water; set aside (Achiote or annatto) Make 3 cups of chicken stock from: 2 chicken thighs, large 2 chicken drumsticks, large 4 cups water 1 tsp salt Bring to a boil and then reduce heat to medium and cook for 30 minutes or until the chicken is cooked thoroughly. Remove the chicken from the broth, debone it and cut it into small pieces. Set aside. 1 cup oil 2 tbsp garlic, finely chopped 1 cup onion, chopped 1 medium-sized bell pepper 1½ tsp salt 1 tsp black pepper 1 tsp MSG (if desired) 1½ cups cream of rice ⅓ cups green onions, chopped 2 hot (chile) peppers Sauté garlic and onions in oil until tender (about 2-3 minutes). Add bell pepper, salt, black pepper and MSG. Cook for 2-3 minutes. Add achote water and chicken stock. Bring water to a boil. Reduce heat to medium low. Add cream of rice, stirring constantly for 8-10 minutes or until rice is cooked. Add green onions and hot pepper. Remove from stove. Let cool. Shell: 10 cups masa harina (Mexican flour) 1 tsp salt 3 cups achote water (from ½ cup of achote seeds) 3 cups water Place masa harina in a large bowl. Add salt and achote water. Knead the dough until blended and form into 2-inch diameter balls. Press into thin tortillas about 6 inches in diameter. Put one heaping teaspoon of empanada filling on each tortilla and fold. Press along the edges to seal (like turnovers). Heat oil about 2-inches deep in the frying pan about 350 degrees Fahrenheit. Fry empanada for 8 minutes, turning over once or twice. Makes 45 empanadas. |

My one week Challenge Presentation
For my one week challenge I would like to share my skills in drawing. Each day I will draw something different to share with the class! Drawing is something I learned as a child. I have since then had been drawing and is something I do as a hobby! The drawings I share on here are all done by me not by another person. They're all free-hand drawings nothing is being traced or printed. Before starting on a drawing I ask myself; "what am I in a mood for? What is the first thing that comes to mind?" Sometimes I may be sitting outside and may have my eye on something. I sometimes get ideas from my surroundings. For example: The drawing with the rose came from an idea I got as I was outdoor watering my garden. Being in my garden reminded me of me wanting to have roses planted and added to my existing garden. So, that's how I came up with the idea of drawing the rose. As you will see in my presentation I will include a drawing of my hand. The drawing represents the hand that did all the work. I hope that you all enjoy the drawings and may be also inspired to do some yourselves.

Life Log: What I eat. How much I spend and my health goal.
I wake up in the morning and have a cup of coffee before doing anything. For lunch, I normally eat meat with rice and I usually have the same for dinner too. I try to add vegetable too in my diet but it's not often that I have vegetable on the menu because I'm the only person in my household that enjoys vegetable. So on a weekly basis my diet usually consumes with meat and rice like pork, beef, or chicken with rice.
I usually spend a little over a hundred ($100) a week on groceries because as I have said meat is always the main course during meal times and meat cost a lot. However, until recently I have been trying to cut back on costs. Since I've learned about managing money through my course, I've been trying to cut back on expenses with meat by also cutting back portions when I cook a meal.
My health is deteriorating and as my doctor had recently told me I may not make it 2 years or may only live at least another 2 years. I'm diabetic, type 2 and my sugar has been out of control now for at least the last 4 years. I love baking and making any kind of sweets or deserts I know how. I'm also addicted to any types of soda especially, Coke or Coca Cola. To make matters worse, I'm a cancer survivor x2 and I've always and have family members also died from cancer and even to this day there are at least a couple of them still battling cancer. Diabetes and even heart disease runs in my family. As of January 2020, I nearly lost my life due to having dangerously high sugar of almost 600 and almost went into what is called a sugar coma. Four days after my sister's 1st year death anniversary, July 12th of 2020 I was in the emergency room because I woke up that morning with chronic pain to my legs and feet. I couldn't stand or walk. This was the day the doctor dropped the bombshell on me about not making it at least another 2 years. With my sugar being out of control I will not survive 2 years. So, I would love to set a goal that this time next year I'm able to lose at least 80 lbs from my current weight of 243 lbs. I would like to get my sugar under control and have it back in normal range and hopefully in a few months I will not have to take anymore insulin shots but only take oral medications. So, with this said I guess it means I need to change my weekly diet and reduce the amount of fats I eat, starch, and especially sugar. If possible I will take sugar out from my diet and all colored drinks too.
